how to setup psybnc to log each channel in separate log file?

You would have to edit the source code for that, psyBNC does not have an option for it built in.

You can probably write your own program/script which can parse psybnc's log and separate the channels' logs into separate log files.

Try sBNC (
http://shroudbnc.info/) it has tcl scripts, so its pretty simple to do with logging whatever you want
